How to Meet Nutrition Guidelines and Student Preferences with Turkey

K-12 schools have a lot of mouths to feed––according to operators, 14.5 million students participated in the breakfast program in 2023, and 49% of operators expect that number to increase year after year. School lunch was popular in 2023 as well, with 28.5 million students participating and 52% of operators expecting that amount to climb.

 

With so many students participating in school meal programs, the stakes are high for providing nutritious, appealing meals that satisfy strict regulations and diverse flavor preferences.

 

Bridging the Satisfaction Gap

While most K-8 parents are satisfied with the quality of the breakfast (74%) and lunch options (78%) that school foodservice programs offer, only 42% and 45% of high school students are satisfied with the quality of their school breakfast and lunch options, respectively. This gap highlights the need for K-12 foodservice operators to find innovative approaches to older students’ tastes and nutritional needs.

 

Balancing Regulations and Preferences

K-12 foodservice operators face the challenge of meeting USDA regulations while offering appealing meals. Sugar and sodium restrictions, plus whole-grain requirements, often limit menu flexibility. However, those same constraints offer opportunities for extra creativity in recipe development.

 

What Students Want

Not surprisingly, students under 18 still love classics like pizza, chicken tenders, burgers and mac and cheese. But high schoolers are showing an increasing appetite for more adventurous options. Among 14- to 17-year-olds, almost half (49%) consider themselves adventurous when trying new flavors or global flavors.
