Keep it cool with this delicious turkey wrap recipe featuring turkey medallions, crunchy romaine and a special sauce made with mayo, mustard, BBQ sauce and honey. Wrap in a whole grain tortilla and serve with extra sauce on the side for dipping fries.

  1. Thaw Turkey: Thaw turkey refrigerator 2 days before preparation. CCP: Hold at 40 °F or lower.
  2. Prepare Sauce: May make a day ahead. In a large mixing bowl, mix mayonnaise, mustard, BBQ sauce, and honey. Note: If honey is not pasteurized, contact local health department for heating instructions. Discard after 7 days of preparation. CCP: Hold at 40 °F or lower.
  3. Mix Turkey, Cheese, and Sauce: In a large bowl or steamtable pan, mix medallions, cheese, and sauce. CCP: Hold at 40 °F or lower.
  4. Build Wraps: Place 1/2 cup (4 fl oz spoodle) packed lettuce. Top with heaping 6 oz spoodle saucy & cheesy turkey medallions. Fold tortilla into a wrap. Cut in half and serve.

CCP: Chef Recommendation: Serve with waffle fries. Make additional sauce to serve with fries.
