  1. Thaw Turkey Thigh Roast under refrigeration 2 days in advance.
  2. Preheat oven to 375 degrees.
  3. Remove turkey thigh roast from packaging, reserve 1.5 cups of turkey broth per turkey thigh roast.
  4. Cut the turkey thigh roast into 2” X 2” pieces and add it to a hotel pan.
  5. Add the chopped onion and minced garlic to the pan.
  6. In a blender, combine the chipotle peppers, cumin, oregano, smoked paprika, pepper, turkey broth, and lime juice to create a Barbacoa marinade. Blend well to combine all the ingredients.
  7. Pour the marinade over the turkey and onion mixture. Stir to evenly coat the turkey.
  8. Cover pan with foil and bake for 25-35 minutes.
  9. Pull from oven and shred turkey barbacoa, mix well to incorporate the turkey and barbacoa sauce.
