Simple yet delicious, this recipe features creamy mashed avocado smeared over toast and topped with cherry tomatoes, turkey sausage and jammy hard-boiled eggs.
Ingredients

large room temperature eggs
2
avocados
1 tbsp.
lime juice
¼ tsp.
salt

heirloom cherry tomatoes, halved

artisan whole-wheat bread, toasted
Directions
- 1. Heat sausage in a skillet until browned and heated through. Slice in half lengthwise and set aside until ready to assemble.
- 2. Bring a medium pot of water to a full rolling boil. Gently lower your eggs into the boiling water.
- 3. Keep water at a full boil for 7 minutes and 30 seconds.
- 4. Meanwhile, fill a medium bowl with cold water and several ice cubes.
- 5. When the time is up, remove the eggs from the boiling water and lower directly into the ice bath. Submerge for 3 minutes. Peel and slice into quarters.
- 6. In a medium bowl, mash the avocado with lime juice and salt.
- 7. Smear the toast with the mashed avocado. Top with cherry tomatoes, sausage links, and 2 quarters of the jammy hard-boiled egg.
