- Cook Stew: Heat oil in a kettle. Add celery and onions. Sauté for 5-10 minutes or until onions turn opaque. Stir frequently. Add sweet potatoes, frozen turkey medallions, green beans, chicken broth, and seasonings. Bring to a boil. Reduce heat and simmer for 35-40 minutes or until sweet potatoes are tender. Remove 2 cups hot liquid from stew. Whisk in cornstarch until smooth. Add back to stew. Simmer until thickened. Heat to 165° F or higher for 15 seconds. Hold at 140° F or higher.
- Serve: 1 cup (~8.9 oz wt).
