Arroz Con Pavo

This Latin-infused, protein-packed dish features sliced turkey breast covered and cooked in bold spices with zesty Sazón-seasoned rice, vegetables and black beans.

Ingredients

Whole wheat flour

1 tbsp.

Adobo seasoning

2 tsp.

Smoked paprika

3 tbsp.

Olive oil

3 cup(s)

Water

1 packet

Sazon

2 cup(s)

Brown rice, uncooked

½

Large onion, finely chopped

½

Green pepper, seeded and finely chopped

2 tbsp.

Tomato paste

1 cup(s)

Mixed vegetables, peas, carrots, corn

15 oz. can

Black beans, rinsed, drained (could be on the side OR mixed in with the rice)

Directions

  1. 1. Heat 2 tbsp olive oil in a large skillet.
  2. 2. In a medium bowl mix together whole wheat flour, adobo seasoning, paprika and pepper to taste.
  3. 3. Dredge the turkey pieces and add to the skillet until golden brown- about 5 minutes per side.
  4. 4. Remove from pan.
  5. 5. To the skillet, add 1 tbsp olive oil the onion, green pepper and rice and cook about 5 minutes.
  6. 6. Then add the water, 1 packet of Sazon and the tomato paste. Stir well.
  7. 7. Add the mixed vegetables and either add the black beans to the rice mixture or serve on the side.
  8. 8. Place the turkey pieces on top, cover the pan and let cook on low heat about 25 minutes or until water is absorbed and the turkey registers 165 degrees.
